Greek Summer Salad

Yield: 2 large salads, or 4 small side dish salads

Quick and easy summer salad for all to enjoy.


  • 2 Cucumbers (peeled/chopped)
  • 2 pints Grape Tomatoes (sliced in half)
  • 1 Red Pepper (chopped)
  • 1 Green Pepper (chopped)
  • 1/2 c. Green Onions (sliced)
  • 1/2 c. Pitted Kalamata Olives (sliced)
  • 1 1/2 - 2 c. Crumbled Feta Cheese
  • 3 T. Red Wine Vinegar
  • 1 T. Lemon Juice
  • 3 T. Olive Oil
  • Salt and Pepper to taste.


  1. Combine all ingredients in a large glass, plastic or ceramic bowl -- toss to incorporate.
  2. Serve immediately, or cover and store in the refrigerator until ready to eat.
  3. Enjoy with pita bread.


Enjoy alone or serve with a grilled burger. Treat yourself to a glass of red wine and the meal is complete.
