Tomato Tulips
Lovely presentation of summer's bounty of tomatoes! Inventive Tomato Tulips for appetizers: Aren’t these darling? Every time I serve them they've been a major hit. Perfect for any occasion.
Ingredients
- 12 large cherry or small Roma tomatoes
- 12 stalks of green onions or chives for the stems
- 200g farmers cheese or cottage cheese for filling (or you could use goat cheese, finely chopped egg, chicken or tuna salad)
- 1 cucumber or pickle (finely chopped to add to the filling)
- Salt and pepper and other herbs to taste
Instructions
- Clean the tomatoes and cut skin in shape of a tulip.
- Mince cucumbers or pickles and fresh herbs and mix with cheese, salt and pepper for filling
- Stuff tomato with filling
- Place green onion at base of tomato for stem.
- Serve on a bed of greens or lace doily
