Greek Summer Salad
Quick and easy summer salad for all to enjoy.
Ingredients
- 2 Cucumbers (peeled/chopped)
- 2 pints Grape Tomatoes (sliced in half)
- 1 Red Pepper (chopped)
- 1 Green Pepper (chopped)
- 1/2 c. Green Onions (sliced)
- 1/2 c. Pitted Kalamata Olives (sliced)
- 1 1/2 - 2 c. Crumbled Feta Cheese
- 3 T. Red Wine Vinegar
- 1 T. Lemon Juice
- 3 T. Olive Oil
- Salt and Pepper to taste.
Instructions
- Combine all ingredients in a large glass, plastic or ceramic bowl -- toss to incorporate.
- Serve immediately, or cover and store in the refrigerator until ready to eat.
- Enjoy with pita bread.
Notes
Enjoy alone or serve with a grilled burger. Treat yourself to a glass of red wine and the meal is complete.
