Lovely presentation of summer's bounty of tomatoes! Inventive Tomato Tulips for appetizers: Aren’t these darling? Every time I serve them they've been a major hit. Perfect for any occasion.

Ingredients

  • 12 large cherry or small Roma tomatoes
  • 12 stalks of green onions or chives for the stems
  • 200g farmers cheese or cottage cheese for filling (or you could use goat cheese, finely chopped egg, chicken or tuna salad)
  • 1 cucumber or pickle (finely chopped to add to the filling)
  • Salt and pepper and other herbs to taste

Instructions

  1. Clean the tomatoes and cut skin in shape of a tulip.
  2. Mince cucumbers or pickles and fresh herbs and mix with cheese, salt and pepper for filling
  3. Stuff tomato with filling
  4. Place green onion at base of tomato for stem.
  5. Serve on a bed of greens or lace doily
