On The Go Trail Mix

OnTheGoTrailMix On The Go Trail Mix

Ingredients

  • 1/2 cup coconut oil
  • Zest from 1 lemon
  • 3 Tbs honey or agave
  • 1 tsp dry basil
  • I tsp dried oregano
  • 1 tsp salt
  • 2 cups Chex-style cereal
  • 1 cup raw almonds or walnuts
  • 1 cup pretzels
  • 1 cup dried cranberries
  • 1 cup chocolate chips

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a saucepan on low heat, add the coconut oil, zest, honey, herbs and salt. Heat through until melted.
  3. Remove from heat, stir and set aside.
  4. In a bowl, mix together the cereal, nuts and pretzels.
  5. Pour the warm mixture on top and toss to coat.
  6. Place the mixture on a cookie sheet and bake for 20 minutes.
  7. Let cool at least 30 minutes.
  8. When cool, add the cranberries and chocolate chips.
  9. ENJOY!
