Fiesta Rice Bowl Eating Light   Fiesta Rice Bowl

Enjoy this quick and easy to prepare food combination for lunch or dinner.


  • 1-½ cups uncooked brown or white rice
  • 1 tsp or more sea salt, divided
  • 2 cups black beans, cooked
  • ½ tsp ground cumin
  • 1 large avocado, peeled and seeded
  • 2 medium tomatoes, diced
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 2 green onions, chopped


  1. 1. Cook rice according to package directions and keep warm.
  2. 2. Warm beans in a small saucepan and stir in ground cumin.
  3. 3. Cut avocado into cubes. Make a salsa by combining diced tomatoes, avocado, lemon juice,
  4. garlic, and green onions; then add sea salt to taste (about ½ tsp). into rice bowls add warm rice, seasoned beans, and salsa.
